From Sigep2025 to FFCR in Helsinki

What an honor and pleasure it was to participate in Sigep 2025 as a Mastro Artigiano at the Bongiovanni Mill booth.

Bongiovanni Mill continues to stand out for its ability to consistently bring the highest-quality ingredients to the market year after year. Equally remarkable is the network of dedicated professionals who collaborate with them, fostering an environment that values both excellence and innovation while maintaining a sense of warmth and community (and family).

This was an extraordinary and intense experience. I aimed to bring a touch of Finland to Italy with a Poronkäristys, reimagined on a dough made with Antiqua Forte Type 1. I must admit, Finland truly made its mark in Italy.

Sigep was the perfect springboard to look ahead to the next challenge: FFCR 2025 in Pasila (Helsinki), which will take place on March 19th and 20th.

At FFCR, I will present a selection of flours and finished products, ranging from the most traditional to the most innovative. For the first time in Finland, I will introduce Performa flour by Bongiovanni Mill — a revolutionary low-carb flour with less than 5% carbohydrates, proudly nominated for the fair’s Innovation Award. This unique product offers a perfect balance of taste, performance, and wellness.
